Chef Sean Sheehan, his sister Sarah Sheehan Hard, and Brother In-law Matson Hard, launched Eileen's in October 2007. Close friend and talented Chef Ron Jarosch joined the Sheehan-Hard family venture, bringing his talent and passion for great food to the team. Sean and Sarah grew up in the restaurant business. Their parents, (Eileen and George) owned a restaurant in Southern Vermont. Back then Sean preferred the front of the house, while Sarah liked to assist in dessert and salad duties in the kitchen. Later their interests switched. Sean found his passion in the kitchen and went on to The Culinary Institute of America and Sarah discovered the thrill of the show in the dining room. Chef Ron and Chef Sean worked together for a decade all over the country as corporate chefs for Magna International, which operated upscale dining facilities at thoroughbred race tracks nationwide
